Good morning Mini Pancake Muffins!

Good morning Mini Pancake Muffins!

All I can say is Yum!

The other great thing about the mini pancake muffins is they turn out as perfect little cups just right to fill with whatever you like. I used strawberry jam.

  • 1 cup milk
  • 6 eggs
  • 1 cup flour
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1/4 cup butter, melted
  • Strawberry jam
  • powdered sugar (optional)

Preheat oven to 400 degrees F. Blend first six ingredients (milk thru vanilla) in a blender. Be careful to see that any flour clumps get well-blended. Blend in butter a little at a time in order to temper the eggs.Grease muffin tins well and distribute batter evenly between 24 tins (I did more like 18 were slightly less than half-full. I used a 1/4 cup measuring cup and filled it almost full.) Bake for 15 minutes, or until puffy and golden on top. Served with your favorite toppings. (Mine was strawberry jam.)

Excellent! Gonna make ours with gluten free flour, and add peanut or almond or cashew butter underneath the jam for a good protein surprise!

Just made these this morning, but mine ended up just like flat muffins? I used strawberry pie topping and powdered sugar. They were a little more egg flavored then I'd like too. Still good though, my hubby liked them plain with the powdered sugar.
